- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder

- 12 fresh strawberries (hulled)
- 1 cup whipped cream or frosting
- 12 red candy balls (for decoration)
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C). Line a cupcake tin with paper liners.
- Mix the Batter: In a bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with dry ingredients. Mix until just combined.
- Bake: Spoon the batter evenly into the cupcake liners, filling each about two-thirds full. Bake in the preheated oven for about 15-18 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely on a wire rack.
- Prepare the Strawberries: Hull the strawberries so they have a flat base that will sit nicely on top of the frosting.
- Frost the Cupcakes: Once the cupcakes are cooled, pipe or spread a generous amount of whipped cream or frosting on top of each cupcake.
- Make the Santa Hats: Place a hulled strawberry upside down on top of the frosting on each cupcake to create the “hat.” Add a small dot of frosting on the tip of the strawberry to mimic the pom-pom of the Santa hat.
- Add Details: Press a red candy ball onto the frosting to act as a ‘nose’ on the front of each cupcake.

- Strawberry Selection: Choose firm, medium-sized strawberries for the best results.
- Alternatives: You can use mascarpone cheese mixed with a little sugar for a richer frosting.
- Candy Balls: If red candy balls are unavailable, any small, red, round candy can be used for decoration.
