Description
Enjoy this delicious and crispy roasted cabbage as a healthy side dish.
Ingredients

- ½ head purple cabbage
- to taste avocado oil spray (or olive oil)
- to taste kosher salt
Instructions
- Preheat oven to 425 degrees.
- On a cutting board, cut the head of cabbage into two halves, through the core. Wrap one half in plastic wrap and refrigerate for another recipe.
- Lay the remaining half flat on a cutting board. Cut the cabbage vertically in half again.
- Carefully cut each half into thin strips, about 1/4 inch thick. If you cut the cabbage too thick, it won’t get crispy.
- Place the cabbage slices flat on a sheet pan. Don’t crowd the sheet pan. I used two sheet pans. Use your fingers to separate the cabbage strands a little bit.
- Spray the cabbage with an even layer of avocado oil. Sprinkle with kosher salt.
- Roast in the oven for 30 to 45 minutes, until a good portion of the cabbage is dark brown and crispy. Enjoy immediately.

- For extra flavor, you can add spices or herbs of your choice before roasting.
