Ingredients

  • 1 cup warm water
  • 1/2 cup warm milk (whole milk recommended)
  • 21/4 teaspoons instant yeast (or active dry)
  • 2 tablespoons honey
  • 3 up to 4 cups bread flour (plus more for dusting surface)
  • 1 teaspoon salt
  • 5 to 7 tablespoons unsalted butter (divided)
  • Cooking spray
  • 8 cups water
  • 1/4 cup baking soda
  • 1 teaspoon coarse salt
  • Cheese sauce (optional, for serving)

Instructions

  1. In a medium bowl, whisk the warm water, warm milk, yeast, and honey; let sit 5–10 minutes until creamy/foamy.
  2. In a stand mixer, combine 3 cups bread flour and salt. Make a well in the middle and pour in 1 tablespoon melted and cooled butter. Add yeast mixture and mix until combined. Gradually add up to 3/4 cup more flour as needed until dough pulls away from sides of bowl.
  3. Knead dough for 5 minutes or by hand on a floured surface. Shape into a ball, coat with cooking spray, cover, and let rise in a warm place for 1.5 hours.
  4. Preheat oven to 450°F. Line a sheet pan with silicone mats or parchment. Punch down the dough, cut into 6 pieces, and roll each piece into ropes (20–22 inches). Cut into bites.
  5. Bring 8 cups of water to a boil, dissolve baking soda, and boil pretzel bites in batches for 10 seconds each. Place on prepared pan.
  6. Melt 4 tablespoons butter and brush over bites. Sprinkle with coarse salt. Bake for 12–18 minutes until golden brown. Brush with remaining butter if desired.
  7. Serve warm.

Notes

  • Yeast may not activate if water/milk is too hot.
  • Adjust flour amount based on dough consistency.
  • Use the recipe as a base to make cinnamon-sugar pretzels.
  • Serve with cheese sauce for an extra treat.
