Description

A delicious salad featuring hard-boiled eggs, new potatoes, and green beans dressed with olive oil and herbs.


Ingredients

Scale
  • 2 hard-boiled eggs, halved
  • 2 lbs new potatoes, scrubbed and halved
  • 1 tbsp salt
  • 1 lb green beans, trimmed and cut into thirds
  • 12 black olives
  • 45 sprigs fresh flat-leaf parsley, chopped
  • 45 sprigs chives, chopped
  • 1/3 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp apple cider vinegar
  • 2 garlic cloves, minced
  • 2 tsp Dijon mustard
  • 1 tbsp chopped capers
  • 1 tbsp chopped black olives
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Place the eggs in a saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let sit for 3 minutes. Drain and place in ice water.
  2. Whisk together olive oil, lemon juice, vinegar, garlic, mustard, capers, olives, salt, and pepper.
  3. Toss parsley and chives with half the dressing. Add potatoes, green beans, and olives. Arrange eggs on top and drizzle remaining dressing.
