Description
A delicious salad featuring hard-boiled eggs, new potatoes, and green beans dressed with olive oil and herbs.
Ingredients

- 2 hard-boiled eggs, halved
- 2 lbs new potatoes, scrubbed and halved
- 1 tbsp salt
- 1 lb green beans, trimmed and cut into thirds
- 12 black olives
- 4–5 sprigs fresh flat-leaf parsley, chopped
- 4–5 sprigs chives, chopped
- 1/3 cup olive oil
- 2 tbsp lemon juice
- 2 tbsp apple cider vinegar
- 2 garlic cloves, minced
- 2 tsp Dijon mustard
- 1 tbsp chopped capers
- 1 tbsp chopped black olives
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Place the eggs in a saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let sit for 3 minutes. Drain and place in ice water.
- Whisk together olive oil, lemon juice, vinegar, garlic, mustard, capers, olives, salt, and pepper.
- Toss parsley and chives with half the dressing. Add potatoes, green beans, and olives. Arrange eggs on top and drizzle remaining dressing.
Notes
- Adjust seasoning to taste.
- Serve chilled or at room temperature.
