Delicious McGriddle Muffins filled with savory sausage, eggs, and cheese.

- 2 cups pancake mix
- 1 cup milk
- 2 tablespoons maple syrup
- 1 tablespoon brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 6 beef sausage patties, cooked
- 6 large eggs
- 6 slices cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin pan or use silicone muffin liners. These muffins can be baked in regular or jumbo tins depending on how hearty you want them.
- In a mixing bowl, whisk together the pancake mix, milk, maple syrup, brown sugar, egg, and vanilla extract. The batter should be smooth but not runny — think classic pancake batter texture.
- Spoon about 1 ½ tablespoons of batter into the bottom of each muffin cup. Add a small piece of cooked beef sausage patty, a bit of scrambled egg, and a small square of cheddar cheese. Top each with another spoonful of batter to seal in the filling. The muffin tins should be about ¾ full.
- Bake for 18–22 minutes, or until the tops are golden and spring back lightly when touched. Let them cool for 5 minutes before removing from the pan.
- Serve warm with an extra drizzle of maple syrup, or cool completely and store for later. These reheat beautifully and make mornings so much easier.
