Chocolate Mint Protein Bars

Description

Delicious and nutritious chocolate mint protein bars made with medjool dates, almond butter, and a rich chocolate ganache.


Ingredients

Scale
  • 1 1/2 cups medjool dates
  • 1/2 cup almond or cashew butter
  • 1/3 cup cacao powder
  • 2 scoops Ka’chava mint chocolate protein powder (or your favorite protein)
  • 1 tbsp coconut oil, melted
  • 1/2 tsp vanilla extract (optional)
  • 1 tbsp milk, of choice (if/as needed)
  • 1/4 tsp mint extract (if you’re not using mint protein)
  • 1/3 cup coconut cream
  • 1/3 cup chocolate chips
  • 1/8 tsp mint extract (optional)
  • Flakey sea salt, for topping

Instructions

  1. Soften the dates: soak the Medjool dates in warm water for 10 minutes if they’re firm, then drain. You can skip this step if your dates are already super soft/gooey!
  2. Blend the base: In a food processor, combine dates, almond butter, cacao powder, melted coconut oil, and a pinch of flakey sea salt. Process until a dough forms. If your dough is dry, you can add a splash of water (1/2-1 tbsp) at a time until the dough holds together, if needed. Be careful not to over-process or it’ll release oils.
  3. Press and chill: Line a loaf pan with parchment paper. Press the mixture evenly into the pan using a spatula or your hands.
  4. Make the chocolate ganache: Add the coconut cream to a small bowl. Heat in the microwave for 20 seconds, until hot but not boiling. Add in the chocolate chips and mint extract (if using) but do not stir. Rather, place a plate over top and let it sit for five minutes. Then remove the plate and stir until you get a glossy chocolate ganache. Pour over the brownie base.
  5. Set and slice: Place in the freezer for at least 3 hours before slicing into bars. I like to top mine with flakey sea salt. Store the bars in an air-tight container in the freezer.

  • You can use any nut butter of your choice.
  • Adjust sweetness by adding more or fewer dates as desired.
