- 1 ½ cups ALL-PURPOSE FLOUR
- 1 cup ROLLED OATS
- ½ cup GRANULATED SUGAR
- 2 teaspoons BAKING POWDER
- ½ teaspoon BAKING SODA
- ½ teaspoon SALT
- 1 large EGG
- 1 cup MILK
- ¼ cup VEGETABLE OIL or MELTED BUTTER
- 1 teaspoon VANILLA EXTRACT
- ¾ cup CHOCOLATE CHIPS
Instructions
- Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it.
- In a large bowl, whisk together the dry ingredients: flour, rolled oats, sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk together the wet ingredients: egg, milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, with a few lumps.
- Fold in the chocolate chips until evenly distributed.
- Fill each muffin cup about ¾ full with the batter.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Feel free to substitute half the chocolate chips with nuts if desired.
- Store any leftover muffins in an airtight container at room temperature for up to 3 days.
