Salsa Baked Eggs

Description

Delicious baked eggs with salsa and cheese, perfect for breakfast or brunch.


Ingredients

Scale
  • ½ cup salsa
  • 2 large eggs
  • 2 tablespoons feta cheese
  • 2 tablespoons shredded Mexican cheese
  • pinch of salt

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a small skillet over medium-high heat, add the salsa. Once it begins to simmer, crack both eggs into the skillet then remove the pan from the heat.
  3. Sprinkle the cheese on top. Place the skillet in the oven and bake until the egg whites are set, about 6 to 9 minutes.
  4. Use an oven mitt to carefully remove the skillet from the oven. Serve immediately with a sprinkle of salt and sliced green onions.
