- 1 lb ground turkey
- 1 can (14 oz) fire-roasted diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 bell pepper, chopped (any color)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion and bell pepper until softened (3-5 minutes).
- Add ground turkey and cook until browned, breaking it apart with a wooden spoon.
- Stir in minced garlic, chili powder, and cumin; cook for another minute.
- Add diced tomatoes (with juice) and drained kidney beans; mix well.
- Bring to a simmer and let it bubble for about 10-15 minutes to meld flavors.
- Taste and adjust seasoning with salt and pepper as needed before serving.
