Ingredients

  • 1 can (14 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 bell pepper, chopped (any color)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the chopped onion and bell pepper until softened (3-5 minutes).
  3. Add ground turkey and cook until browned, breaking it apart with a wooden spoon.
  4. Stir in minced garlic, chili powder, and cumin; cook for another minute.
  5. Add diced tomatoes (with juice) and drained kidney beans; mix well.
  6. Bring to a simmer and let it bubble for about 10-15 minutes to meld flavors.
  7. Taste and adjust seasoning with salt and pepper as needed before serving.
