Chocolate Covered Date Balls

Description

Delicious chocolate-covered date balls made with nut butter and dark chocolate, perfect for a sweet treat!


Ingredients

  • 18 oz Medjool dates (pitted, approx. 500g)
  • ½ cup smooth nut butter (almond, peanut, or cashew; approx. 135g)
  • 1 cup dark chocolate (melted, approx. 180g)
  • to taste Flaky sea salt (optional, for topping)

Instructions

  1. Add the pitted dates and nut butter to a food processor. Blend for 2–3 minutes, stopping to scrape down the sides as needed, until a thick, sticky dough forms that holds together when pressed.
  2. If the mixture is too firm for your food processor, add 1–2 teaspoons warm water or a little extra nut butter to help it blend.
  3. Scoop the mixture into about 20 portions (roughly 1 tablespoon each) and roll into balls. Place on a parchment-lined tray and freeze for 10 minutes to firm up.
  4. Melt the dark chocolate in the microwave or over a double boiler until smooth.
  5. Dip each chilled ball into the melted chocolate, letting any excess drip off, then return to the lined tray.
  6. Sprinkle with flaky sea salt while the chocolate is still wet, if using.
  7. Return to the freezer for another 15–20 minutes, or until the chocolate is fully set.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • Variation: Try adding chopped nuts for added texture!
