A hearty and flavorful dish featuring tender sirloin steak cooked to perfection in a slow cooker.

- 3 pounds sirloin steak, cut into bite-sized pieces
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock
- 1 ounce packet au jus gravy mix
- 4 tablespoons unsalted butter, thinly sliced
- Fresh chopped parsley for garnish (optional)
Instructions
- Place the steak pieces into a large bowl with the salt and pepper and toss to coat evenly.
- Heat a large skillet over medium-high heat and add half of the oil. Sear the steak pieces in batches, placing each seared batch into an 8-quart slow cooker. Add more oil as needed between batches.
- Once all the steak is seared, add the thinly sliced onion and garlic to the slow cooker and toss with the steak bites.
- Pour in the beef stock. Sprinkle the au jus packet evenly over the top. Lay the thin slices of butter over everything.
- Cover the slow cooker and cook on high for 3–4 hours or on low for 6–8 hours. Stir every 30 minutes if possible.
- Serve hot over egg noodles, mashed potatoes, or rice. Garnish with fresh parsley if desired.
Notes
- This dish is perfect for meal prep and can be stored in the fridge for up to 3 days.
- For extra flavor, consider adding mushrooms or bell peppers to the slow cooker.
