- 1 pound ground beef
- 2 cups diced potatoes
- 1 cup corn (canned or frozen)
- 1 can Rotel tomatoes
- 1 can green chiles
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces cream cheese
- 4 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat until fully cooked. Drain excess grease.
- Add chopped onion and garlic to the pot. Cook for 3–4 minutes until softened.
- Stir in potatoes, corn, Rotel, green chiles, chili powder, cumin, salt, and pepper. Mix well.
- Pour in the chicken broth and bring to a boil. Reduce to a simmer, cover, and cook for 20–25 minutes until potatoes are tender.
- Add cream cheese in chunks and stir until melted and smooth. Simmer for another 5 minutes to blend flavors.
- Taste and adjust seasoning if needed. Serve hot.
Notes
- This soup can be served with crusty bread for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
