Description

A hearty and creamy soup made with ground beef, potatoes, and a blend of flavorful ingredients.


Ingredients

  • 1 pound ground beef
  • 2 cups diced potatoes
  • 1 cup corn (canned or frozen)
  • 1 can Rotel tomatoes
  • 1 can green chiles
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces cream cheese
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked. Drain excess grease.
  2. Add chopped onion and garlic to the pot. Cook for 3–4 minutes until softened.
  3. Stir in potatoes, corn, Rotel, green chiles, chili powder, cumin, salt, and pepper. Mix well.
  4. Pour in the chicken broth and bring to a boil. Reduce to a simmer, cover, and cook for 20–25 minutes until potatoes are tender.
  5. Add cream cheese in chunks and stir until melted and smooth. Simmer for another 5 minutes to blend flavors.
  6. Taste and adjust seasoning if needed. Serve hot.
