Description

Ingredients

  • 1 cup pastina pasta
  • 4 cups low-sodium vegetable broth
  • 1 medium carrot, diced
  • 1 medium stalk celery, diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent (about 3-4 minutes).
  2. Add diced carrots and celery; stir for another 5 minutes until slightly softened.
  3. Pour in vegetable broth and bring to a gentle simmer.
  4. Stir in pastina pasta; cook according to package instructions (8-10 minutes) until al dente.
  5. Season with salt and pepper to taste. Add fresh thyme and parsley just before serving.

Notes

  • This soup can be served with grated Parmesan cheese on top for extra flavor.
  • To make it heartier, consider adding beans or other vegetables.
