Description
Delicious cheesy bell peppers stuffed with ground beef, rice, and vegetables.

- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can (14 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil.
- Cook the Filling: Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sauté until translucent. Add ground beef or turkey, cook until browned. Drain excess fat if necessary. Stir in diced tomatoes, cooked rice, salt, black pepper, and Italian seasoning. Cook for another 2-3 minutes.
- Stuff the Peppers: Spoon the beef and rice mixture into each bell pepper, pressing down as needed to fill completely. Place the stuffed peppers upright in a baking dish.
- Bake: Sprinkle shredded cheese over the top of each stuffed pepper. Cover the dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Sprinkle freshly chopped parsley over the top before serving.
Notes
- If using uncooked rice, add an additional 15 minutes to the baking time.
- For a vegetarian version, substitute meat with black beans or tofu.
- Add a splash of hot sauce to the filling for extra spice.
- Feel free to mix different types of cheese for more flavor depth.
