Ingredients

  • 2 cups shredded mozzarella cheese

  • 1 cup heavy cream
  • to taste salt and pepper
  • 1/2 teaspoon nutmeg
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook Bacon: In a skillet, cook the bacon until crisp. Remove, drain on paper towels, and crumble.
  3. Sauté Spinach Mixture: In the same skillet, add olive oil and sauté the onion until translucent. Add garlic and spinach, cook until spinach is wilted. Season with salt, pepper, and nutmeg.
  4. Prepare Cheese Sauce: In a saucepan, melt butter over medium heat. Add heavy cream and bring to a simmer. Stir in Parmesan, mozzarella, and cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  5. Assemble Casserole: In a baking dish, layer the spinach mixture at the bottom. Pour cheese sauce evenly over the spinach. Sprinkle crumbled bacon on top and add extra mozzarella if desired.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.
