- 4 cups fresh spinach, chopped
- 1 cup cooked bacon, crumbled
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup heavy cream
- to taste salt and pepper
- 1/2 teaspoon nutmeg
- 1/2 cup grated Parmesan cheese
- 4 tablespoons butter
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook Bacon: In a skillet, cook the bacon until crisp. Remove, drain on paper towels, and crumble.
- Sauté Spinach Mixture: In the same skillet, add olive oil and sauté the onion until translucent. Add garlic and spinach, cook until spinach is wilted. Season with salt, pepper, and nutmeg.
- Prepare Cheese Sauce: In a saucepan, melt butter over medium heat. Add heavy cream and bring to a simmer. Stir in Parmesan, mozzarella, and cheddar cheese until melted and smooth. Season with salt and pepper to taste.
- Assemble Casserole: In a baking dish, layer the spinach mixture at the bottom. Pour cheese sauce evenly over the spinach. Sprinkle crumbled bacon on top and add extra mozzarella if desired.
- Bake: Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.

- For added flavor, mix in some chopped sun-dried tomatoes with the spinach.
