Description

Deliciously creamy tartlets topped with fresh berries, perfect for any occasion.


Ingredients

  • 2 large egg yolks
  • 1/3 cup (65 g) sugar
  • 2 tablespoons (20 g) cornstarch (or all-purpose flour)
  • 10 fl oz (300 ml) hot milk
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup (100 g) sugar (for pastry)
  • 4 oz (115 g) unsalted butter, softened
  • 1 teaspoon vanilla extract (for pastry)
  • Pinch salt
  • 1 1/2 cups (190 g) all-purpose flour
  • Fresh berries (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease the tartlet mold with butter and flour.
  2. Whisk the egg yolks, 1/3 cup sugar, and cornstarch in a medium-sized pan until smooth.
  3. Add the hot milk gradually, whisking continuously to prevent lumps.
  4. Cook the mixture over medium heat until it reaches a slow boil, then cook for a few more minutes. Refrigerate until cool.
  5. In a bowl, whisk 1 egg and 1/2 cup sugar until light and fluffy for the tartlet dough.
  6. Add softened butter, 1 teaspoon vanilla extract, a pinch of salt, and flour, mixing until combined.
  7. Wrap the dough in plastic wrap for at least 30 minutes.
  8. Roll out the chilled dough to 1/8 inch thick and cut out rounds with a cookie cutter.
  9. Press the dough into the tartlet mold and prick the bottoms with a fork.
  10. Bake the shells for 14-15 minutes until golden, then cool completely.
  11. Fill the custard into each tartlet shell and top with fresh berries before serving.
