Description
Delicious bite-sized Beef Wellington made with tender beef, mushrooms, and prosciutto wrapped in flaky puff pastry.

- 1 pound beef tenderloin, cut into 1-inch cubes
- 1 sheet puff pastry, thawed
- 1 cup mushrooms, finely chopped
- 4 slices prosciutto, chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tablespoon Dijon mustard
- 2 tablespoons parsley, chopped
- 1 egg, beaten (for egg wash)
- Salt and Pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Sear Beef:
- Season the beef cubes with salt and pepper.
- Heat olive oil in a pan over medium-high heat. Sear the beef cubes until browned on all sides. Remove and set aside.
- Prepare Mushroom Duxelles:
- In the same pan, add butter and sauté the onions and garlic until translucent.
- Add mushrooms and cook until they release their moisture and become golden brown.
- Mix in chopped prosciutto and cook for another minute.
- Remove from heat, stir in Dijon mustard and parsley. Let it cool.
- Cut Puff Pastry:
- Roll out the puff pastry sheet on a floured surface. Cut into 2-inch squares.
- Assemble Bites:
- Lay a square of puff pastry on a baking sheet lined with parchment.
- Place a teaspoon of the mushroom mixture in the center.
- Top with a seared beef cube.
- Brush the edges of the pastry with egg wash to help them brown.
- Bake:
- Bake in the preheated oven for 12-15 minutes or until the puff pastry is golden and cooked through.
- Serve:
- Let cool slightly and serve warm, garnished with extra parsley if desired.
Notes
- Make sure to cool the mushroom mixture before assembling to prevent the pastry from becoming soggy.
- For more flavor, you can add a dash of brandy or white wine to the mushrooms while cooking.
- Ensure the puff pastry is well chilled before cutting and baking to achieve the best puff and texture.
