Description

Delicious bite-sized Beef Wellington made with tender beef, mushrooms, and prosciutto wrapped in flaky puff pastry.


Ingredients

  • 1 pound beef tenderloin, cut into 1-inch cubes
  • 1 sheet puff pastry, thawed
  • 1 cup mushrooms, finely chopped
  • 4 slices prosciutto, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon Dijon mustard
  • 2 tablespoons parsley, chopped
  • 1 egg, beaten (for egg wash)
  • Salt and Pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Sear Beef:
    • Season the beef cubes with salt and pepper.
    • Heat olive oil in a pan over medium-high heat. Sear the beef cubes until browned on all sides. Remove and set aside.
  3. Prepare Mushroom Duxelles:
    • In the same pan, add butter and sauté the onions and garlic until translucent.
    • Add mushrooms and cook until they release their moisture and become golden brown.
    • Mix in chopped prosciutto and cook for another minute.
    • Remove from heat, stir in Dijon mustard and parsley. Let it cool.
  4. Cut Puff Pastry:
    • Roll out the puff pastry sheet on a floured surface. Cut into 2-inch squares.
  5. Assemble Bites:
    • Lay a square of puff pastry on a baking sheet lined with parchment.
    • Place a teaspoon of the mushroom mixture in the center.
    • Top with a seared beef cube.
    • Brush the edges of the pastry with egg wash to help them brown.
  6. Bake:
    • Bake in the preheated oven for 12-15 minutes or until the puff pastry is golden and cooked through.
  7. Serve:
    • Let cool slightly and serve warm, garnished with extra parsley if desired.

  • Make sure to cool the mushroom mixture before assembling to prevent the pastry from becoming soggy.
