Description

A delicious and moist cake made with ripe bananas and crushed vanilla wafers, topped with cream cheese frosting and garnished with fresh banana slices.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup mashed ripe bananas (about 3 bananas)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sour cream
  • 1 cup vanilla wafers, crushed (plus extra for garnish)
  • 1 ½ cups cream cheese frosting
  • Fresh banana slices for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add Eggs: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Add Bananas and Vanilla: Mix in the mashed bananas and vanilla extract until well combined.
  6. Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined—do not overmix.
  7. Fold in Wafers: Gently fold in the crushed vanilla wafers.
  8. Bake: Pour the batter into the prepared cake pan. Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool and Frost: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Once cooled, spread the cream cheese frosting evenly over the cake.
  10. Garnish: Decorate with additional crushed vanilla wafers and fresh banana slices, if desired.

Notes

  • Banana Selection: Use ripe bananas for the best flavor and texture.
  • Frosting Variation: For a different flavor, try a banana-flavored frosting or add a touch of cinnamon to the cream cheese frosting.
  • Storage: Store in an airtight container in the refrigerator for up to 3 days.
  • Serving Tip: Serve with a side of vanilla ice cream for an extra treat.
