Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- Cream Butter and Sugar: In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add Eggs: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Add Bananas and Vanilla: Mix in the mashed bananas and vanilla extract until well combined.
- Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined—do not overmix.
- Fold in Wafers: Gently fold in the crushed vanilla wafers.
- Bake: Pour the batter into the prepared cake pan. Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Frost: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Once cooled, spread the cream cheese frosting evenly over the cake.
- Garnish: Decorate with additional crushed vanilla wafers and fresh banana slices, if desired.
