  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with flour mixture. Mix until just combined.
  6. Divide the batter evenly among the cupcake liners.
  7. In a small bowl, mix the flour, brown sugar, and cinnamon for the streusel topping.
  8. Cut in the cold butter using a pastry cutter or fork until the mixture looks like coarse crumbs.
  9. Sprinkle the streusel evenly over the cupcake batter.
  10. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  12. For the frosting, beat the softened butter until creamy.
  13. Gradually add the powdered sugar, mixing until smooth.
  14. Stir in vanilla extract and cream, beating until light and fluffy.
  15. Pipe or spread the frosting over the cooled cupcakes.
