Description

Delicious rolls made with sweet potato, perfect for any meal.


Ingredients

  • ¾ cup whole milk (warm, about 110°F / 43°C)
  • 4 tablespoons unsalted butter (melted and slightly cooled, plus extra for finishing)
  • 2 large eggs (at room temperature)
  • 1 cup mashed sweet potato (at room temperature)
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 5 cups all-purpose flour (or bread flour, see notes)
  • 1 packet (2 ¼ teaspoons) instant yeast
  • milk or egg wash (optional, for browning)

Instructions

  1. In the bowl of a stand mixer, combine the warm milk, melted butter, eggs, mashed sweet potato, honey, and salt.
  2. Add the flour and yeast. Using the dough hook attachment, knead on medium speed for 10 minutes until a soft and slightly tacky dough forms.
  3. If the dough is too sticky, add more flour 1 tablespoon at a time, just until the dough pulls away from the sides of the bowl but remains soft.
  4. Transfer the dough to a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1 to 1½ hours.
  5. Punch down the dough and divide into 20 equal portions, about 60 g each. Shape each into a tight ball by tucking the edges underneath and rolling on the counter.
  6. Arrange the rolls in a greased 9×13-inch (23×33 cm) baking dish or on a sheet pan. Cover and let rise for 30–45 minutes until puffy and touching.
  7. Preheat the oven to 350°F (180°C).
  8. Brush the tops of the rolls with milk or egg wash if desired. Bake for 20–25 minutes, or until golden brown and the internal temperature reaches 190°F (88°C).
  9. Remove from the oven and brush with melted butter while warm. Let cool slightly before serving.

Notes

  • For best results, ensure the sweet potato is fully mashed and at room temperature before mixing into the dough.
  • You can use bread flour for a chewier texture.
