Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3/4 cup milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- 1 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)

In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

In another bowl, mix the milk, eggs, melted butter, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

In a large, deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).

Using a small scoop or a spoon, carefully drop tablespoon-sized dough balls into the hot oil. Fry the donuts in batches, ensuring they are not overcrowded, for about 2-3 minutes or until golden brown, turning halfway through.

Remove the donuts with a slotted spoon and drain on paper towels.

In a shallow bowl, mix the additional cup of sugar with the tablespoon of cinnamon. While the donuts are still slightly warm, roll them in the cinnamon sugar mixture until well coated.
Notes
- Ensure the oil is at the right temperature. Too hot, and the donuts will brown too quickly on the outside while remaining uncooked inside; too cool, and they will absorb too much oil.
- If you don’t have a thermometer, test the oil with a small piece of dough. It should sizzle and rise to the surface quickly.
- These donuts are best enjoyed fresh on the day they are made for optimal texture and flavor.
