- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach leaves
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 eggs, beaten
- 2 tablespoons Parmesan cheese, grated
- 1 tablespoon butter
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Spinach Filling: In a skillet, heat olive oil over medium heat. Add the garlic and sauté until fragrant. Add the spinach leaves and cook until wilted. Remove from heat and let cool. In a bowl, mix the cooked spinach with ricotta, mozzarella, and Parmesan cheese. Add salt, pepper, and herbs, if using.
- Prepare the Chicken: Butterfly the chicken breasts by cutting them horizontally along the side, but not all the way through. Open them like a book. Spoon the spinach and cheese mixture onto one side of each chicken breast and fold over to enclose the filling.
- Coat the Chicken: Place breadcrumbs in a shallow dish. Season with salt and pepper. Dip each stuffed chicken breast into beaten eggs and then roll in the breadcrumbs until well coated.
- Cook the Chicken: In an oven-safe skillet, melt butter over medium heat. Add the chicken breasts and cook until golden brown on both sides. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
- Serve: Remove from the oven and let rest for a few minutes. Slice and serve hot.
Notes
- Ensure the chicken is dry before coating in eggs and breadcrumbs to help the coating stick better.
- If desired, use toothpicks to secure the stuffed chicken breasts to prevent the filling from spilling out.
- You can add different cheeses or seasonings to the filling for variety, such as feta or sun-dried tomatoes.
- Serve with a side of steamed vegetables or a fresh salad for a complete meal.
