  • 2 tablespoons lemon juice

  • Fresh strawberries for garnish
  • Lemon slices for garnish

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. Set aside.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Combine Wet Ingredients: In a mixer, beat the softened butter until creamy. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract, lemon zest, and strawberry puree.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with milk. Begin and end with the dry ingredients. Mix until just combined.
  5. Bake: Divide the batter evenly among the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  6. Make the Frosting: Beat softened butter until creamy. Gradually add confectioners’ sugar, lemon juice, and vanilla extract. Beat until smooth and fluffy.
  7. Assemble the Cake: Place one cake layer on a serving platter. Spread a layer of frosting over the top. Repeat with the second layer, and top with the final cake layer. Frost the top and sides of the cake with the remaining frosting.
  8. Garnish: Decorate with fresh strawberries and lemon slices on top.

  • For a more intense strawberry flavor, add diced strawberries between the layers.
