Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. Set aside.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Combine Wet Ingredients: In a mixer, beat the softened butter until creamy. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract, lemon zest, and strawberry puree.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with milk. Begin and end with the dry ingredients. Mix until just combined.
- Bake: Divide the batter evenly among the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Make the Frosting: Beat softened butter until creamy. Gradually add confectioners’ sugar, lemon juice, and vanilla extract. Beat until smooth and fluffy.
- Assemble the Cake: Place one cake layer on a serving platter. Spread a layer of frosting over the top. Repeat with the second layer, and top with the final cake layer. Frost the top and sides of the cake with the remaining frosting.
- Garnish: Decorate with fresh strawberries and lemon slices on top.

- For a more intense strawberry flavor, add diced strawberries between the layers.
- Ensure all ingredients are at room temperature for a smoother batter and better rise.
- If using frozen strawberries for the puree, thaw them completely and drain excess liquid.
- For clean slices, use a sharp knife and wipe it clean between cuts.
