Description
A delightful treat that combines the sweetness of fresh strawberries with a creamy cheesecake filling, perfect for any occasion.
Ingredients
Scale
- 10 large fresh strawberries (ripe)
- 8 oz cream cheese (softened)
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 lemon (zest from one)
- Fresh blueberries (for garnish)
Instructions
- Prepare the Strawberries:
- Wash the strawberries thoroughly and pat them dry.
- Hull the strawberries by removing the green tops, and create a small cavity by cutting into the center from the top.
- Slice the pointed end of each strawberry slightly so they can stand upright.
- Make the Cheesecake Filling:
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract.
- Mix well using an electric mixer until smooth and creamy.
- Pipe the Filling:
- Fill a piping bag with the cheesecake mixture. If you don’t have a piping bag, you can use a ziplock bag with the corner snipped off.
- Carefully pipe the cream cheese filling into the center of each strawberry, filling it to the top.
- Garnish:
- Top each filled strawberry with a fresh blueberry.
- Sprinkle a bit of lemon zest over the top for added flavor and decor.
Notes
- Choose the largest strawberries you can find for easier filling.
- Make sure the cream cheese is fully softened to achieve a smooth mixture and easy piping.
- You can prepare the cheesecake mixture a day in advance and store in the refrigerator.
- For extra flavor, try adding a teaspoon of lemon juice to the cream cheese mixture.
- Keep the strawberry bites refrigerated until serving to ensure freshness.
