Delicious garlic roasted Yukon Gold potatoes, perfect as a side dish.

- 3 pounds Yukon Gold potatoes
- 5 cloves garlic, minced
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 1 cup chicken broth
- 2 teaspoons dried oregano
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Peel and cut the potatoes into thick wedges, about 6–8 pieces per potato.
- In a bowl, whisk together the olive oil, chicken broth, lemon juice, garlic, oregano, and salt.
- Preheat the oven to 400°F (200°C). Arrange the potato wedges in a single layer in a large roasting pan.
- Pour the lemon-garlic mixture over the potatoes and toss to coat. Cover the pan tightly with foil.
- Bake for 40 minutes covered.
- Remove foil, flip potatoes, and bake uncovered for another 30–40 minutes, flipping once halfway, until crisp and golden.
- Sprinkle with black pepper and parsley if using. Serve warm.
