A delicious breakfast casserole loaded with sausage, hash browns, eggs, and cheese.

- 1 pound breakfast sausage, cooked and drained
- 4 cups frozen hash browns, unthawed
- 8 large eggs
- 1 cup whole milk
- 1 ½ cups shredded cheddar cheese, divided
- 1 red bell pepper, diced
- ¼ cup green onions, sliced
- 1 cup fresh spinach, chopped (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, brown the sausage until fully cooked. Drain excess grease.
- Spread frozen hash browns evenly in the bottom of the baking dish.
- Layer the cooked sausage over the hash browns.
- Sprinkle diced red bell pepper, green onions, and chopped spinach (if using) on top.
- Add 1 cup of shredded cheddar cheese over the mixture.
- In a bowl, whisk together eggs, milk, salt, and pepper until fully blended.
- Pour the egg mixture evenly over the layers in the baking dish.
- Sprinkle the remaining ½ cup of cheddar cheese on top.
- Bake uncovered for 40–45 minutes or until the center is set and the top is golden.
- Let it rest for 5–10 minutes before slicing and serving.
Notes
- This casserole can be prepared the night before and refrigerated before baking.
