Instructions

  1. Melt the Chocolate: In a heatproof bowl, melt the dark chocolate over a pan of simmering water. Stir occasionally until smooth. Remove from heat and let it cool slightly.
  2. Heat Cream and Milk: In a medium saucepan, combine the heavy cream and milk. Heat over medium heat until the mixture is warm, but not boiling.
  3. Prepare Egg Mixture: In a separate bowl, whisk together the egg yolks, granulated sugar, and salt until pale and slightly thickened.
  4. Combine Mixtures: Gradually add the warm cream mixture to the egg yolk mixture, whisking constantly to avoid curdling. Once combined, return the mixture to the saucepan.
  5. Cook Custard: Cook over low heat, stirring frequently, until the custard thickens enough to coat the back of a spoon. Do not allow it to boil.
  6. Add Chocolate: Remove from heat and stir in the melted chocolate and vanilla extract until fully incorporated and smooth.
  7. Chill the Dessert: Pour the custard into individual serving dishes or one large dish. Cover with plastic wrap, pressing it directly on the surface to prevent a skin from forming. Refrigerate for at least 4 hours or until set.
  8. Serve: Serve chilled with a dollop of whipped cream and a sprinkle of chocolate shavings if desired.
