- 1 box red velvet cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 1 package (8 oz) cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips or candy melts
Instructions
- Bake the Cake:
- Preheat your oven to 350°F (175°C).
- Prepare the red velvet cake batter according to the package instructions using eggs, water, and oil.
- Pour the batter into a greased 9×13 inch baking pan.
- Bake for approximately 30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely, then crumble it into fine crumbs in a large bowl.
- Make the Cream Cheese Filling:
- In a medium bowl, beat the softened cream cheese and butter until smooth.
- Gradually add in the powdered sugar and vanilla extract, and continue beating until creamy.
- Form Cake Bites:
- Combine the crumbled cake and the cream cheese mixture.
- Mix until well combined and you can form the mixture into smooth, cohesive balls.
- Shape the mixture into bite-sized balls and place them on a lined baking sheet.
- Freeze for about 30 minutes to 1 hour, or until firm.
- Coat with Chocolate:
- Melt the white chocolate chips or candy melts in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each cake ball into the melted chocolate, making sure it’s fully covered.
- Place the coated cake bites back on the baking sheet to set.
Notes
- If you’re short on time, store-bought red velvet cake or leftover cake can work as well.
- For easier dipping, use a fork or a toothpick to handle the cake bites.
- Decorate the bites with additional sprinkles or drizzle with dark chocolate for extra flair.
