Enjoy your delicious Red Velvet Cake Bites!

Ingredients

Scale
  • 1 box red velvet cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups white chocolate chips or candy melts

Instructions

  1. Bake the Cake:
    • Preheat your oven to 350°F (175°C).
    • Prepare the red velvet cake batter according to the package instructions using eggs, water, and oil.
    • Pour the batter into a greased 9×13 inch baking pan.
    • Bake for approximately 30 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cake cool completely, then crumble it into fine crumbs in a large bowl.
  2. Make the Cream Cheese Filling:
    • In a medium bowl, beat the softened cream cheese and butter until smooth.
    • Gradually add in the powdered sugar and vanilla extract, and continue beating until creamy.
  3. Form Cake Bites:
    • Combine the crumbled cake and the cream cheese mixture.
    • Mix until well combined and you can form the mixture into smooth, cohesive balls.
    • Shape the mixture into bite-sized balls and place them on a lined baking sheet.
    • Freeze for about 30 minutes to 1 hour, or until firm.
  4. Coat with Chocolate:
    • Melt the white chocolate chips or candy melts in a microwave-safe bowl, stirring every 30 seconds until smooth.
    • Dip each cake ball into the melted chocolate, making sure it’s fully covered.
    • Place the coated cake bites back on the baking sheet to set.

Notes

  • If you’re short on time, store-bought red velvet cake or leftover cake can work as well.
  • For easier dipping, use a fork or a toothpick to handle the cake bites.
  • Decorate the bites with additional sprinkles or drizzle with dark chocolate for extra flair.
  • Store in an airtight container in the refrigerator for up to a week.
