Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
- Prepare the Sponge Cake: In a large bowl, beat the eggs and granulated sugar together using an electric mixer until the mixture is thick, creamy, and pale in color. Stir in the vanilla extract. Sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until well combined.
- Bake the Cake: Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched. Carefully invert the cake onto a clean kitchen towel dusted with confectioners’ sugar. Peel off the parchment paper and roll the cake up with the towel from the short side. Allow it to cool completely.
- Prepare the Cream Filling: In a chilled bowl, whip the heavy cream, confectioners’ sugar, and vanilla extract together until stiff peaks form.
- Assemble the Swiss Roll: Gently unroll the cooled cake and spread the whipped cream over the surface. Evenly distribute the diced peaches over the cream. Carefully roll the cake back up without the towel, ensuring the seam is at the bottom.
- Chill and Serve: Wrap the roll tightly in plastic wrap and refrigerate for at least 1 hour before serving. Before serving, garnish with peach slices and mint leaves, if desired.
