Description

A delicious and creamy chicken salad perfect for sandwiches or as a light meal.


Ingredients

  • 3 cups cooked chicken, finely chopped or shredded
  • 1/2 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1/3 cup celery, finely diced
  • 1/4 cup sweet pickle relish
  • 1/4 cup red onion, finely minced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Optional: chopped hard-boiled eggs

Instructions

  1. Add the chopped or shredded cooked chicken to a large mixing bowl.
  2. In a separate bowl, whisk together mayonnaise, mustard, sugar, salt, black pepper, and paprika until smooth.
  3. Pour the dressing over the chicken and gently fold to coat evenly.
  4. Add celery, sweet pickle relish, and red onion. Mix until well combined.
  5. Taste and adjust seasoning as needed.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Serve chilled on sandwich bread, croissants, crackers, or over fresh lettuce.
