Description

A delicious spiced cake made with unsweetened applesauce, perfect for any occasion!


Ingredients

  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 cups unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan. Line with parchment paper if desired.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then add applesauce and vanilla. Batter may look slightly curdled.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in raisins and chopped nuts if using.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 35–40 minutes, until a toothpick comes out clean.
  9. Cool completely on a wire rack.
  10. Dust with powdered sugar, slice, and serve.
