Ingredients
Scale
- 4 large eggs
- 3/4 cup granulated sugar
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground nutmeg, plus more for garnish
- Pinch of salt
Instructions
- In a medium bowl, whisk together the eggs and granulated sugar until light and creamy.
- In a medium saucepan, combine milk, heavy cream, nutmeg, and salt. Heat over medium heat until just steaming, but do not boil.
- Gradually add the hot milk mixture to the eggs and sugar, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens slightly and reaches 160°F (about 71°C). Do not let it boil.
- Remove from heat, stir in vanilla extract, and transfer to a jug or pitcher. Chill in the refrigerator for at least 2 hours before serving.
- Serve cold, garnished with a sprinkle of ground nutmeg.
Notes
- This eggnog can be made a day in advance and stored in the refrigerator.
- For a richer flavor, consider using fresh nutmeg instead of ground.
