Description

A delicious roasted cauliflower dish drizzled with a tahini-honey sauce, perfect as a side or main dish.


Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • ½ tsp ground coriander
  • ¼ tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup tahini
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 1 small garlic clove, minced
  • 24 tbsp warm water (to thin)
  • Salt, to taste
  • Optional Garnish: Chopped fresh parsley or cilantro, Toasted sesame seeds, Pomegranate seeds

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, cumin, paprika, coriander, cinnamon, salt, and pepper.
  3. Spread evenly on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.
  4. In a bowl, whisk together tahini, honey, lemon juice, garlic, and salt. Gradually add warm water until smooth and pourable.
  5. Drizzle the tahini-honey sauce over warm roasted cauliflower.
  6. Garnish as desired and serve immediately.

Notes

  • This dish is best served warm.
  • Adjust the consistency of the tahini sauce by adding more or less warm water.
  • You can serve this dish as a side or as a main vegetarian option.
