- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup buttermilk
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 1/2 cups fresh strawberries, halved
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1/2 cup fresh cherries, pitted
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the Cake Layers: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a mixing bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- Make the Whipped Cream Filling: In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to overwhip.
- Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of whipped cream on top. Arrange a layer of strawberries, blueberries, raspberries, and cherries over the whipped cream. Place the second cake layer on top and repeat the process. Frost the sides and top of the cake with the remaining whipped cream. Decorate the top and sides of the cake with the remaining mixed berries.
Notes
- For best results, use fresh, ripe berries.
- If you like your cake sweeter, add more sugar to the whipped cream filling.
- The cake can be made a day in advance. Store in the refrigerator and add the fresh berries just before serving.
