Description
A delicious and zesty cookie recipe for lemon lovers.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup powdered sugar (for coating)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix Wet Ingredients: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the lemon zest and lemon juice until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Form the Dough: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Shape the Cookies: Roll dough into 1.5-inch balls, then roll each ball in powdered sugar until fully coated. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake: Bake in the preheated oven for about 10-12 minutes or until edges are set and the tops are cracked. Remove from oven and allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Ensure that your butter is fully softened for the best texture.
- For extra lemon flavor, increase the lemon zest or add a teaspoon of lemon extract.
- To prevent sticking, you can chill the dough for 30 minutes before rolling it into balls.
- Store cookies in an airtight container to maintain freshness.
