Description
A delicious and hearty reuben casserole made with layers of rye bread, corned beef, sauerkraut, and Swiss cheese, topped with Thousand Island dressing.

- 4 cups day-old rye bread, cubed
- 1 lb lean corned beef, shredded
- 2 cups sauerkraut, drained
- 2 cups shredded Swiss cheese
- 1 cup Thousand Island dressing
- 1 tsp caraway seeds (optional)
- 2 tbsp butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
- Layer half of the rye bread cubes in the dish.
- Spread half of the corned beef over the bread, followed by half of the sauerkraut and half of the Swiss cheese.
- Repeat the layers with the remaining ingredients.
- Drizzle Thousand Island dressing over the top and sprinkle with caraway seeds if using.
- Cover with aluminum foil (shiny side down) and bake for 30 minutes.
- Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
- Let cool for a few minutes before slicing and serving.

- For best flavor, use fresh ingredients.
- This dish can be prepared ahead of time and refrigerated before baking.
