- 4 boneless, skinless chicken breasts
- 2 cups ripe tomatoes, diced
- 1 cup fresh basil leaves, torn
- 3 cloves garlic, minced
- 8 oz fresh mozzarella cheese, sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar

Instructions
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper. Place them in the prepared baking dish.
- In a medium bowl, combine diced tomatoes, minced garlic, torn basil leaves, olive oil, balsamic vinegar, salt, and pepper. Mix well.
- Top each chicken breast with the bruschetta mixture and then layer with slices of mozzarella cheese.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly.
