Description

Delicious chicken breasts topped with a fresh bruschetta mixture and mozzarella cheese, baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups ripe tomatoes, diced
  • 1 cup fresh basil leaves, torn
  • 3 cloves garlic, minced
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • to taste Salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. Place them in the prepared baking dish.
  3. In a medium bowl, combine diced tomatoes, minced garlic, torn basil leaves, olive oil, balsamic vinegar, salt, and pepper. Mix well.
  4. Top each chicken breast with the bruschetta mixture and then layer with slices of mozzarella cheese.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly.
