Description

A comforting soup with shredded chicken, wild rice, and hearty vegetables.


Ingredients

  • 4 Tablespoons unsalted butter
  • 1 cup diced onion
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 teaspoon Kosher salt
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1/2 teaspoon black pepper
  • 1 clove finely minced garlic
  • 1 bay leaf
  • 2 Tablespoons white rice flour
  • 4 cups chicken broth
  • 3/4 cup uncooked wild rice blend
  • 2 cups shredded cooked chicken
  • 2 cups whole milk
  • fresh parsley (for garnish, if desired)

Instructions

  1. Melt 4 Tablespoons unsalted butter in a large heavy-bottomed pot over medium heat.
  2. Add 1 cup diced onion, 1 cup diced carrot, 1 cup diced celery, 1 teaspoon Kosher salt, 1 teaspoon dried sage, 1 teaspoon dried thyme, 1 teaspoon dried marjoram, and 1/2 teaspoon black pepper. Saute for 6-8 minutes or until the onion is translucent.
  3. Add 1 clove finely minced garlic and 1 bay leaf, and saute for another minute or two, until the garlic is fragrant.
  4. Sprinkle 2 Tablespoons white rice flour over the vegetables and stir for about 2 minutes until it becomes lightly golden.
  5. Add 4 cups chicken broth, a little at a time, stirring after each addition until it is smooth.
  6. Once all the broth has been stirred in, add 3/4 cup uncooked wild rice blend. Bring to a boil, cover, reduce heat to low, and simmer for about 30-45 minutes until the rice is cooked.
  7. Stir in 2 cups shredded cooked chicken, then slowly stir in 2 cups whole milk, and let everything heat through but do not let it come to a boil.
  8. Season with salt and pepper, to taste. Sprinkle with fresh parsley before serving, if desired.

Notes

  • This soup can be customized with different vegetables.
  • For a thicker soup, add more white rice flour.
  • Great for leftovers!
