Description

A delicious and easy recipe for Garlic Herb Chicken served with mashed potatoes and glazed carrots.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 2 lbs potatoes, peeled and cubed
  • ¼ cup butter
  • ½ cup milk (or more as needed)
  • Salt and black pepper, to taste
  • 1 lb carrots, peeled and sliced
  • 2 tablespoons butter
  • 1 tablespoon honey or brown sugar
  • ¼ teaspoon salt

Instructions

  1. Season chicken with garlic, Italian seasoning, paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Cook chicken for 6–7 minutes per side, until golden and cooked through. Remove and keep warm.
  4. Boil potatoes in salted water for 15–18 minutes, until fork-tender.
  5. Drain, then mash with butter and milk. Season to taste.
  6. Boil carrots for 8–10 minutes until tender; drain.
  7. Melt butter in a pan, add honey and salt, then toss carrots until glossy and coated.

Notes

  • This recipe can be easily adapted with different herbs based on personal preference.
  • For creamier mashed potatoes, add more milk as needed.
