  • 4 cups chicken broth or beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup uncooked pasta (lasagna noodles broken into pieces or small pasta)
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot over medium heat, add the ground beef or Italian sausage. Cook until browned, breaking it up with a spoon as it cooks.
  2. Once the meat is cooked, add diced onion and cook until soft. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Stir in the diced tomatoes and tomato sauce, mixing well with the meat and onions.
  4. Add the chicken or beef broth to the pot, stirring to combine.
  5. Sprinkle in the Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
  6. Once boiling, add the uncooked pasta to the soup. Reduce heat to medium-low and let it simmer for about 10-15 minutes, or until the pasta is tender.
  7. After the pasta is cooked, gradually stir in the heavy cream, mixing until fully incorporated and the soup is creamy.
  8. Add the shredded mozzarella and ricotta cheese to the pot, stirring until melted and well mixed into the soup.
