- 1 can (28 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 4 cups chicken broth or beef broth

- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup uncooked pasta (lasagna noodles broken into pieces or small pasta)
- 1 cup heavy cream
- 2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- Fresh basil for garnish (optional)
Instructions
- In a large pot over medium heat, add the ground beef or Italian sausage. Cook until browned, breaking it up with a spoon as it cooks.
- Once the meat is cooked, add diced onion and cook until soft. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the diced tomatoes and tomato sauce, mixing well with the meat and onions.
- Add the chicken or beef broth to the pot, stirring to combine.
- Sprinkle in the Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, add the uncooked pasta to the soup. Reduce heat to medium-low and let it simmer for about 10-15 minutes, or until the pasta is tender.
- After the pasta is cooked, gradually stir in the heavy cream, mixing until fully incorporated and the soup is creamy.
- Add the shredded mozzarella and ricotta cheese to the pot, stirring until melted and well mixed into the soup.
- Taste the soup and adjust seasonings as needed for flavor.
- Ladle the soup into bowls and garnish with fresh basil if desired.

- For a lighter version, you can use ground turkey or chicken instead of beef.
