Key Ingredients for Easy Spinach Lasagna Roll Ups

Easy spinach lasagna roll ups are a delightful twist on traditional lasagna, providing a cozy meal that feels both indulgent and healthy. Each ingredient plays a crucial role in making these roll-ups a flavorful dish that pleases everyone at the dinner table.

  • Lasagna Noodles: I prefer using oven-ready lasagna noodles. They save time and allow for a perfectly soft texture without the hassle of boiling.

  • Ricotta Cheese: This ingredient adds a creamy richness to the filling. I often choose whole milk ricotta for its velvety consistency, but part-skim works just as well.

  • Spinach: Fresh spinach is a must for this recipe; it wilts beautifully and packs in nutrients. If you’re in a pinch, frozen spinach is a good alternative—just be sure to thaw and drain it thoroughly.

  • Mozzarella Cheese: I typically layer generous amounts of shredded mozzarella inside and on top for that gooey, melty goodness.

  • Marinara Sauce: A quality marinara sauce can elevate your roll-ups significantly. Opt for a brand with herbs and spices for added flavor, or make your own for a personal touch.

  • Parmesan Cheese: A sprinkle of grated Parmesan adds a savory depth that complements the other ingredients beautifully.

These simple yet effective ingredients come together to create easy spinach lasagna roll ups that are not only beautiful but utterly satisfying.

Cooking Tips and Notes for Easy Spinach Lasagna Roll Ups

Creating easy spinach lasagna roll ups can be a delightful experience, but mastering the technique is key to success. Here are some tips to ensure your dish turns out perfectly every time.

Perfecting your noodle technique

Using lasagna noodles can be tricky, but a few tricks can help. Make sure to cook the noodles until they’re al dente; they should be slightly firm to the bite. This makes rolling easier and helps prevent them from breaking apart. A splash of olive oil in the boiling water can also prevent the noodles from sticking together.

Tips for assembling your roll ups

When it comes to assembling your easy spinach lasagna roll ups, the filling is crucial. Spread the ricotta mixture evenly on each noodle, leaving a small border at the edges. Carefully roll them up from one end to the other, ensuring the filling stays securely inside. Placing a bit of sauce at the bottom of your baking dish will help prevent sticking and keep your roll ups moist during baking.

How to store leftovers properly

If you have any leftovers, store them in an airtight container in the refrigerator for up to three days. To reheat, place them in the oven covered with foil to prevent drying out. You can also freeze the roll ups by wrapping them individually in plastic wrap and placing them in a freezer-safe container. They can be stored this way for up to three months. Enjoy every delicious bite!

Description

Delicious lasagna roll-ups filled with a creamy spinach and ricotta mixture, perfect for family dinners.

Ingredients

Scale
  • 1 package uncooked lasagna noodles
  • 10 oz package frozen chopped spinach – thawed and rung out
  • 15 oz part-skim ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Kosher salt and black pepper to taste
  • 2 cups marinara sauce – plus more for serving

Instructions

  1. Preheat the oven to 350°F and spray a 9×13 baking pan with cooking spray to prevent sticking.
  2. Prep the noodles. Cook the noodles 1 minute less than suggested by the package instructions. This will make them perfectly pliable to fill and fold but not too mushy when they are baked. Strain the noodles after cooking and run them under cold water then lay them out onto a baking sheet in between paper towels. This will get rid of excess moisture and prevent them from sticking as you go about spreading the filling onto each noodle.
  3. Make the spinach and cheese filling. Add the spinach, ricotta, 1/2 of the parmesan cheese, 1/4 cup of the mozzarella, egg, Italian seasoning, garlic powder, salt and pepper to a mixing bowl.
  4. Mix to combine into a creamy, spinach filling.
  5. Assemble the roll ups. Working with one lasagna noodle at a time, lay out each cooked lasagna noodle onto a flat surface and spread on some of the spinach cheese filling end to end. Roll it up starting at one end and rolling toward the other end. Continue until you have assembled all of the roll ups.
  6. Place half of the sauce into the bottom of a 9×13 inch pan and spread it out evenly to cover the bottom of the pan. Lay the lasagna rolls ups seam side down in a single layer on top of the sauce. There should be room for 12 roll ups that fit nicely in 3 rows in the pan if you are using a 9×13 pan.
  7. Pour a little bit of sauce over the top of each roll up and top with more mozzarella and parmesan cheese and a sprinkle of Italian seasoning.
  8. Cover the pan tightly with foil and bake for 35 minutes at 350° F. After 35 minutes, remove the foil, increase the oven temperature to 375° F and let them bake for 7-10 more minutes to help the cheese to fully melt.
  9. Remove, let cool and enjoy with a little bit more sauce and sprinkle of parmesan cheese.

Notes

  • Make sure to run the noodles under cold water to keep them pliable and prevent sticking.
  • Feel free to add other vegetables to the filling as desired.
