Deliciously crispy Indian samosas filled with spiced potatoes and peas, perfect as appetizers or snacks.
Ingredients

- 2 cups all-purpose flour
- 2 tablespoons oil
- 1/2 teaspoon salt
- Water (as needed)
- 2 tablespoons oil (for filling)
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 2 large potatoes (boiled and mashed)
- 1/2 cup peas (boiled)
- Salt to taste
- 1 tablespoon ginger-garlic paste
- 1–2 green chilies (finely chopped)
- Fresh coriander leaves (chopped)
- Oil for deep frying
Instructions
- Dough Preparation:
- In a mixing bowl, combine flour, salt, and oil.
- Gradually add water and knead into a firm dough.
- Cover the dough and let it rest for 30 minutes.
- Filling Preparation:
- Heat oil in a pan over medium heat.
- Add cumin and mustard seeds, and let them splutter.
- Add ginger-garlic paste and sauté until raw aroma disappears.
- Add turmeric powder, garam masala, and coriander powder. Stir well.
- Add boiled potatoes and peas. Mix thoroughly.
- Add salt, green chilies, and chopped coriander leaves. Combine well.
- Cook the mixture for a few minutes, then let it cool.
- Assembling the Samosas:
- Divide the dough into equal portions and roll into balls.
- Roll each ball into a thin oval shape and cut in half.
- Take one half and form a cone shape, sealing the edge with water.
- Fill the cone with the potato mixture and seal the top with water.
- Repeat with the remaining dough and filling.
- Frying:
- Heat oil in a deep pan for frying.
- Carefully slide samosas into the hot oil.
- Fry until golden brown and crisp on all sides.
- Remove from oil and drain excess oil on paper towels.
Notes
- Ensure the dough is firm; a soft dough may lead to soggy samosas.
- Adjust the spice level by altering the quantity of green chilies.
- For extra crispiness, fry the samosas twice.
- You can freeze the assembled uncooked samosas for later use. Fry directly from frozen, adjusting the frying time as needed.
