Description

Deliciously crispy Indian samosas filled with spiced potatoes and peas, perfect as appetizers or snacks.


Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons oil
  • 1/2 teaspoon salt
  • Water (as needed)
  • 2 tablespoons oil (for filling)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 2 large potatoes (boiled and mashed)
  • 1/2 cup peas (boiled)
  • Salt to taste
  • 1 tablespoon ginger-garlic paste
  • 12 green chilies (finely chopped)
  • Fresh coriander leaves (chopped)
  • Oil for deep frying

Instructions

  1. Dough Preparation:
    • In a mixing bowl, combine flour, salt, and oil.
    • Gradually add water and knead into a firm dough.
    • Cover the dough and let it rest for 30 minutes.
  2. Filling Preparation:
    • Heat oil in a pan over medium heat.
    • Add cumin and mustard seeds, and let them splutter.
    • Add ginger-garlic paste and sauté until raw aroma disappears.
    • Add turmeric powder, garam masala, and coriander powder. Stir well.
    • Add boiled potatoes and peas. Mix thoroughly.
    • Add salt, green chilies, and chopped coriander leaves. Combine well.
    • Cook the mixture for a few minutes, then let it cool.
  3. Assembling the Samosas:
    • Divide the dough into equal portions and roll into balls.
    • Roll each ball into a thin oval shape and cut in half.
    • Take one half and form a cone shape, sealing the edge with water.
    • Fill the cone with the potato mixture and seal the top with water.
    • Repeat with the remaining dough and filling.
  4. Frying:
    • Heat oil in a deep pan for frying.
    • Carefully slide samosas into the hot oil.
    • Fry until golden brown and crisp on all sides.
    • Remove from oil and drain excess oil on paper towels.

Notes

  • Ensure the dough is firm; a soft dough may lead to soggy samosas.
  • Adjust the spice level by altering the quantity of green chilies.
  • For extra crispiness, fry the samosas twice.
  • You can freeze the assembled uncooked samosas for later use. Fry directly from frozen, adjusting the frying time as needed.
