Instructions

  1. Prepare Chicken: Pound the chicken breasts to about 1/4-inch thickness using a meat mallet. Season both sides with salt, pepper, and paprika.
  2. Assemble the Roll: Lay a slice of ham and a slice of Swiss cheese on each chicken breast. Carefully roll up the chicken breasts, securing them with toothpicks.
  3. Coating: Prepare three separate bowls: Bowl 1: Mix flour with a pinch of salt and pepper. Bowl 2: Beat the eggs and mix with Dijon mustard. Bowl 3: Combine breadcrumbs with Parmesan cheese.
  4. Bread the Chicken: Dredge each chicken roll in the flour, then dip into the egg mixture, and finally coat with the breadcrumb mixture.
  5. Cooking: Preheat the oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium heat. Sear each roll for about 2-3 minutes per side until golden brown. Transfer the skillet to the oven and bake for about 20-25 minutes, or until chicken is cooked through.
  6. Serving: Remove toothpicks before serving. Garnish with fresh parsley and serve hot.
