- 3 boneless, skinless chicken breasts (about 1 lbs)
- 2 tablespoons taco seasoning
- 8 soft tortillas (flour or corn)
- 1 cup shredded lettuce
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- ½ cup sour cream or Greek yogurt
- Fresh cilantro (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season chicken breasts with taco seasoning and toss with olive oil until coated.
- Spread chicken on the baking sheet and bake for 20-25 minutes until cooked through (165°F internal temperature).
- Let chicken rest for 5 minutes before shredding.
- Warm tortillas in a skillet over medium heat for about 30 seconds on each side.
- Assemble tacos by filling tortillas with shredded chicken, lettuce, tomatoes, cheese, and sour cream.
- Return assembled tacos to the oven for another 5-7 minutes until warmed through.
