Description

Delicious chicken tacos made with seasoned shredded chicken and fresh toppings wrapped in warm tortillas.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1 lbs)
  • 2 tablespoons taco seasoning
  • 8 soft tortillas (flour or corn)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup sour cream or Greek yogurt
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with taco seasoning and toss with olive oil until coated.
  3. Spread chicken on the baking sheet and bake for 20-25 minutes until cooked through (165°F internal temperature).
  4. Let chicken rest for 5 minutes before shredding.
  5. Warm tortillas in a skillet over medium heat for about 30 seconds on each side.
  6. Assemble tacos by filling tortillas with shredded chicken, lettuce, tomatoes, cheese, and sour cream.
  7. Return assembled tacos to the oven for another 5-7 minutes until warmed through.
