Description

A deliciously creamy and fruity dessert perfect for any occasion.

Ingredients

Scale
  • 1 cup fresh raspberries
  • 250g mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 package ladyfinger biscuits
  • 1/2 cup raspberry juice or syrup
  • 2 tablespoons raspberry liqueur (optional)
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Prepare the Cream Mixture:

    • In a large mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract.
    • Use an electric mixer to beat until the mixture is smooth and forms soft peaks.
  2. Prepare the Raspberry Layer:

    • In a shallow dish, combine raspberry juice or syrup with raspberry liqueur (if using).
  3. Assemble the Tiramisu:

    • Quickly dip each ladyfinger biscuit into the raspberry mixture, ensuring they are soaked but not soggy.
    • Arrange a layer of soaked ladyfingers at the bottom of a serving dish.
    • Spread half of the mascarpone cream mixture over the ladyfingers.
    • Scatter a layer of fresh raspberries over the cream.
    • Repeat with another layer of soaked ladyfingers, followed by the remaining cream mixture and raspberries.
  4. Chill:

    • Cover the dish with plastic wrap.
    • Refrigerate for at least 4 hours, ideally overnight, to allow flavors to meld.
  5. Serve:

    • Before serving, dust the top with powdered sugar.
    • Slice and serve chilled.

Notes

  • Ensure all ingredients are cold before starting to make the cream mixture.
  • For an extra raspberry punch, layer some raspberry jam between the ladyfinger layers.
  • This dessert can be made a day in advance to enhance its flavor.
