Description

A delicious creamy chicken and bacon pasta dish that’s perfect for any occasion.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 6 strips of bacon
  • 400g rotini pasta (or any pasta of choice)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste Salt
  • to taste pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup chopped fresh parsley
  • 1/2 cup shredded cheddar cheese (optional, for garnish)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium heat. Cook the chicken breasts until golden brown and fully cooked, about 6-7 minutes per side. Remove from the skillet and let rest before slicing into bite-sized pieces.
  2. Cook the Bacon: In the same skillet, cook the bacon strips until crispy. Remove and place on a paper towel-lined plate to drain excess grease. Once cooled, crumble the bacon.
  3. Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  4. Make the Cream Sauce: In the skillet with residual bacon fat, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring well to combine. Let it simmer for 2-3 minutes. Add grated Parmesan cheese, stirring until melted and the sauce thickens slightly.
  5. Combine Ingredients: Add the cooked pasta to the sauce, tossing to coat evenly. Stir in sliced chicken and crumbled bacon. Add chopped parsley and mix.
  6. Serve: Transfer the pasta to a serving dish. Garnish with cheddar cheese and additional parsley if desired.

Notes

  • Adjust seasoning as needed throughout the cooking process.
  • For a spicier kick, add a pinch of red pepper flakes to the cream sauce.
  • Ensure the pasta is well-drained to avoid a watery sauce.
  • Experiment with other herbs like basil or thyme for a different flavor profile.
