  • 2 bay leaves
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Rinse dried black-eyed peas under cold water and soak overnight if using dried.
  2. Chop onion, carrots, and celery.
  3. In a large pot over medium heat, add olive oil. Sauté onion, carrots, and celery until tender (about 5 minutes).
  4. Add minced garlic, cumin, salt, and pepper; cook for another minute until fragrant.
  5. Pour in vegetable broth and add soaked or canned black-eyed peas along with bay leaves. Bring to a boil then reduce heat to simmer.
  6. Simmer uncovered for 30-40 minutes (15-20 for canned) until peas are tender.
