Instructions
- Mix Peanut Butter Filling: In a mixing bowl, combine peanut butter, powdered sugar, softened butter, and vanilla extract. Stir until the mixture is smooth and well combined.
- Shape the Truffles: Take small amounts of the mixture and roll them into 1-inch balls. Place the balls on a baking sheet lined with parchment paper. Freeze the balls for about 20 minutes, until firm.
- Prepare Chocolate Coating: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
- Coat the Truffles: Remove the peanut butter balls from the freezer. Using a fork or skewer, dip each ball into the melted chocolate, ensuring it is completely covered. Place them back on the parchment paper.
- Add Coatings: Optional: Sprinkle chopped nuts or crushed cookies over the chocolate coating before it sets. Refrigerate for about 30 minutes until the chocolate hardens.

- Ensure the peanut butter mixture is stiff enough to hold its shape. If too soft, add a bit more powdered sugar.
- Be gentle when dipping the balls in chocolate. Using a fork helps to gently tap off excess chocolate.
