Description

Enjoy your delicious Chocolate Fudge Cookie Cups!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Shaved chocolate for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Make Cookie Dough: In a bowl, cream together the butter, granulated sugar, and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. In a separate bowl, combine the flour, cocoa powder, baking soda, and salt; gradually blend into the creamed mixture. Stir in the chocolate chips.
  3. Shape Cookie Cups: Grease a muffin tin. Divide the dough into 12 equal portions and press them into the wells, creating a cup shape.
  4. Bake: Bake in the preheated oven for 10-12 minutes, until the edges are firm.
  5. Create Fudge Filling: While the cookies bake, heat the heavy cream in a saucepan until it begins to simmer, not boil. Remove from heat and add 1 cup of semisweet chocolate chips and vanilla extract. Stir until smooth and glossy.
  6. Assemble Cookie Cups: Once the cookie cups are baked and slightly cooled, press the center down gently to create a larger well. Pour the fudge filling into the center of each cookie cup.
  7. Garnish: Garnish with shaved chocolate as desired.

Notes

  • Make sure the butter is at room temperature for easier mixing.
  • Use a spoon to press down the centers of the cookie cups after baking to ensure a deep well for filling.
  • You can use white or milk chocolate for a different flavor profile in the fudge filling.
