Description

Delicious and tender chicken souvlaki, marinated and grilled to perfection, served with warm pita and fresh sides.

Ingredients

Scale
  • 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • ¼ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for added color and warmth)
  • 1 tablespoon plain Greek yogurt (optional, for extra tenderness)

Instructions

  1. Prep the Chicken: Start by cutting your chicken into evenly-sized, bite-sized cubes. This ensures they cook evenly and soak up the marinade better.
  2. Mix the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, pepper, and paprika. If using, stir in the Greek yogurt—this adds a subtle tang and helps tenderize the meat even more.
  3. Marinate the Chicken: Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, making sure every piece is coated. Seal and refrigerate for at least 2 hours, though overnight is best for deep flavor.
  4. Cook to Perfection: When ready to cook, thread the marinated chicken onto skewers. Grill over medium-high heat for about 10–12 minutes, turning occasionally, until the chicken is golden and cooked through. You can also bake or pan-sear the chicken if grilling isn’t an option.
  5. Serve It Your Way: Serve the chicken souvlaki hot off the grill with warm pita, a crisp Greek salad, tzatziki, and maybe a sprinkle of feta. Wrap it up or plate it generously—either way, it’s guaranteed to impress.

Notes

  • For best results, marinate the chicken overnight for maximum flavor.
  • These skewers can be cooked on a grill, baked in the oven, or pan-seared.
  • Feel free to add bell peppers or onions to the skewers for additional flavor.
